What is dextrose? Uses in food manufacturing

What is dextrose? It is the trade name for D-glucose, a simple sugar made from corn starch or cassava starch. It comes as a white powder and is about 70 - 75% as sweet as table sugar. The most common form in the food industry is dextrose monohydrate.

This article explains what dextrose is, its technical properties, its uses in baked goods, confectionery, ice cream, beverages and processed meat, and what to check when choosing a supplier.

What is dextrose?

The US Food and Drug Administration (FDA) defines dextrose as D-glucose, formula C6H12O6, in either anhydrous or monohydrate form. Because it is mostly made from corn, dextrose is also called corn sugar.

What is dextrose?

Production follows three main steps:

  • Starch hydrolysis: Corn or cassava starch is fully broken down into glucose with acids or enzymes (alpha-amylase and glucoamylase).
  • Refining: The sugar liquor is filtered, decolorized and concentrated.
  • Crystallization: The concentrated liquor is cooled so the glucose crystallizes, then dried into a white powder.

In the US, dextrose is classified as GRAS and can be used in food with no limitation other than good manufacturing practice (GMP).

Is dextrose the same as glucose?

When people ask what dextrose is, the most common follow-up is whether it is glucose. The answer is yes. Dextrose is D-glucose, the form of glucose found in nature and used by the body. In chemistry, glucose covers both the D and L forms, but on food labels and in production, crystalline glucose powder and dextrose are the same thing.

Is dextrose the same as glucose?

However, dextrose is not the same as glucose syrup. Glucose syrup is a solution of several sugars obtained from starch. Under the US standard, it has at least 70% solids and a dextrose equivalent (DE) of at least 20. Dextrose is a crystalline powder made almost entirely of glucose, so the two ingredients differ in sweetness, viscosity and use.

Dextrose monohydrate vs dextrose anhydrous

Dextrose is sold in two main commercial forms:

  • Dextrose monohydrate: Each glucose molecule carries one molecule of water of crystallization, about 9% of the weight. This is the most common form in confectionery, beverages and processed food.
  • Dextrose anhydrous: The dry form with almost no water of crystallization, usually chosen when the product needs a very low water content.

Because of the roughly 9% difference in water, you need to adjust the weight when you swap one form for the other to keep the same amount of glucose in the formula.

Technical properties of dextrose

Compared with table sugar (sucrose), dextrose differs in a few ways that shape how it is used in production:

Criteria

Dextrose

Table sugar (sucrose)

Sugar type

Monosaccharide (glucose)

Disaccharide (glucose + fructose)

Relative sweetness

About 70 - 75%

100% (reference)

Reducing sugar

Yes, takes part in Maillard browning

No

Fermentation

Used directly by yeast and lactic acid bacteria

Must be broken down first

Freezing point depression

About 1.9 times sucrose

Reference

These properties make dextrose useful for lowering sweetness while keeping total solids, deepening crust color and making fermentation faster and more consistent.

Uses of dextrose in food manufacturing

Once you know what dextrose is, it is easy to see why it appears in so many product groups. Each one uses a different property.

Uses of dextrose in food manufacturing

  • Baked goods and bread: As a reducing sugar, dextrose helps crusts turn golden brown faster at the same oven temperature. Yeast also uses glucose directly, so dough ferments more evenly.
  • Confectionery and sugar coatings: Dextrose gives a mild sweetness and a light cooling feel as it dissolves in the mouth. It is often blended with sucrose to fine-tune sweetness.
  • Ice cream and frozen desserts: Dextrose lowers the freezing point almost twice as much as sucrose. Replacing part of the sucrose with dextrose keeps ice cream softer straight from the freezer without making it too sweet.
  • Powdered beverages: Dextrose dissolves quickly in water and blends easily with other dry ingredients in instant drinks.
  • Fermented meat products: In fermented sausages, dextrose feeds the lactic acid bacteria that turn it into lactic acid, which lowers pH and supports the typical cured color.
  • Pharmaceuticals: Pharma grade dextrose is made to pharmacopoeia standards, which are stricter than those for food grade.

Is dextrose healthy?

As a food ingredient, dextrose is recognized as safe by the FDA when used under GMP. Still, dextrose is a sugar. When added to food, it counts as a free sugar, and the World Health Organization (WHO) recommends keeping free sugars below 10% of daily energy intake.

For manufacturers, this means swapping sucrose for dextrose can lower sweetness but does not turn a product into a low-sugar product. Dextrose in a formula still counts toward total sugars on the nutrition label.

Storing dextrose and choosing a supplier

Powdered dextrose can cake when exposed to moisture. Store bags in a cool, dry, well-ventilated place away from direct sunlight, keep them on pallets off the floor and close each bag tightly after use.

When choosing a supplier, check the following:

  • COA for every batch: Moisture, purity, DE and microbiological limits should be reported for each batch, not only once when the contract is signed.
  • Grade: Food grade is for food, pharma grade is for pharmaceuticals. State the grade clearly in your purchase order.
  • Packaging: 25 kg bags are the common format. Bags should have a moisture barrier liner and a label with batch number, production date and expiry date.
  • Origin and import documents: For imported dextrose, you need full certificates of origin and food safety documents to support product registration.
  • Stable supply: Ask how much the supplier can deliver each month, especially in peak seasons such as Tet and the Mid-Autumn Festival.

When you choose dextrose for production, decide between monohydrate and anhydrous, specify the grade and ask for a COA for every batch. Goodprice directly imports dextrose monohydrate in food grade and pharma grade, packed in 25 kg bags. Send us a quote request with your specifications and expected volume.

Frequently asked questions

What kind of sugar is dextrose?

Dextrose is the simple sugar D-glucose, the same glucose found in fruit and honey, produced industrially from starch.

What is dextrose made from?

Dextrose is made from starch, most often corn starch and also cassava starch. The starch is hydrolyzed into glucose and then crystallized into powder.

Is dextrose as sweet as sugar?

No. Dextrose is about 70 -75% as sweet as table sugar, so it is often used to lower sweetness while keeping total solids.

Is dextrose monohydrate glucose?

Yes. Dextrose monohydrate is crystalline glucose with one molecule of water, which makes up about 9% of its weight.
